Hijiki with Carrot

If you like seaweed salad, this is another kind of sea vegetables you can try.  A healthy side dish that’s low in calories and rich in fiber.

 

Ingredients:

  • 1/2 cup dried hijiki
  • 1 tablespoon of carrot, shredded
  • 1/2 cup of water or dashi*
  • 1.5 tablespoons of soy sauce
  • 2 tablespoons of honey or mirin
  • 1 tablespoon of sesame oil
  • 1 teaspoon of sesame seeds

Directions:

  1. Rinse Hijiki and soak in warm water for 15 minutes, drained.
  2. In a saucepan, heat up sesame oil, add carrot and cook until softened (turn heat to medium)
  3. Stir in Hijiki, soy sauce, honey and water until all liquid evaporates
  4. Sprinkle sesame seeds and serve cold

蘋果瘦肉湯 Apple with Meat Soup

Another favorite winter’s soup with many health benefits.  It’s nourishing to the lung, healing dry cough and it’s very good for the skin.  It’s sweet but light and tastes fresh.

Ingredient:

  • 1 Apple (I used Fuji apple)
  • 1/4 lb of lean pork meat
  • 2 tablespoons of Sweet and Bitter Apricot Kernels 南北杏
  • 2 tablespoons of Longan 龍眼肉
  • 2 candied dates 蜜棗

Directions:

  1. Rinse the apricot kernels, longan and dates under tap water
  2. Peel apple, cut into 4 pieces
  3. Bring a pot of water to a boil, put all ingredients in and simmer for 1.5 – 2 hours

Asparagus in Sun-Dried Tomato Vinaigrette

An excellent 15 minute cold side dish that everyone loves.  Asparagus is low in calories, full of antioxidants and vitamins. With this light sun-dried tomato vinaigrette, this dish can match anyone’s healthy diet.  This dish also tastes delicious and it’s super easy to make.

 

Ingredients:

  • 1 lb fresh asparagus
  • 1/4 cup sun-dried tomatoe sprinkles
  • 1/4 cup balsamic vinegar
  • 1 tablespoon of olive oil
  • 1 garlic clove, minced

Directions:

  1. Bring a pot of water to boil, add asparagus, covered, 4 minutes.  (do not over-cooked)
  2. Chill in fridge for an hour.
  3. Combine sun-dried tomatoes, garlic, balsamic vinegar and olive oil. Drizzle over asparagus.

Note:  You can also steam or roast the asparagus, they taste just as good when you serve them cold.
