Blueberry Ricotta Muffins

Thank you Elaine for sharing the recipe! ย We love it so much that I’m going to make this again on the weekend. ๐Ÿ™‚

Makes 14 Muffins

Dry ingredients:
1.5 cups flour
3/4 cups sugar + brown sugar
1/2 teaspoons sea salt
2 teaspoons baking powder

Wet ingredients:
1/3 cup canola oil
5 Tablespoons soymilk
2 Teaspoons vanilla extract
1 egg
3/4 cups ricotta cheese
2ย cups fresh blueberries

Directions:

Mix the dry and wet separately and then stir the 2 together without overmixing. ย Fill up the muffin pan to 3/4 full.

Bake at 375 for 20 mins!

    Oh I wonder why yours turned out so much darker than mine! Maybe its the soy milk? I like the color of yours, they look more like muffins haha

      I think it’s the brown sugar….let me make them again with regular sugar…i’ll let you know the result! ๐Ÿ™‚ yours look really good as well..it was ur picture that inspired me to make them initially..=D
